restaurant to-do list: wolfe’s BBQ, denver

Last night, on our way to the (absolutely jaw dropping) Bjork concert at Red Rocks I learned about Wolfe’s BBQ. According to Greg, who’d dined there for dinner prior they feature a BBQ Tofu (vegetarian, holla) unlike anything he’s ever tasted.
Intrigued, and feeling a general craving for BBQ (the meatier the better for me, mind you) over the last couple of weeks I decided to do a little searching.
I came across Rob Bellinger’s blog, and enjoyed his description of the food AND scene (perfectly capturing the essence of Colfax) so much I wanted to share it with everyone. (I plan on sharing some of the briscuit-with my stomach- as soon as humanly possible.)
His BBQ, however, cuts no corners. To attain surprisingly authentic flavor, he uses a hickory/charcoal combo to smoke his meat. I tried the three-course dinner: brisket, pork, and beef sausage were my meat selections.
As for the dining room experience?
As I doused my dinner roll in hot, house recipe barbecue sauce, over-under-dressed hipsters with bad tattoos ordered bbq tofu sandwiches and discussed having their bands play together. State house types in suits came in and got some cue to power them through a boring night of research. And proprietors of other East Colfax businesses also came in to pick up dinner.
An interesting side note; on asking about all the vegetarian offerings, Wolfe himself stated that without the veggie tofu, they probably would have closed ten years ago.
Sounds like a must-eat in my opinion.

Vegan breads, baked beans, cole slaw, and fruit salad.
I’m a fiend for BBQ but haven’t tried Wolfe’s yet. The best I’ve had in Denver is M&D’s. BBQ ribs plus lemonade plus sweet potato pie = bliss.
