quick healthy recipe: egg beaters sandwich

During the day, I try to stay disciplined with my eating. Being an on again, off again devotee of the Body for Life program mandates that I have regularly scheduled ‘feedings’ during my work day that include a serving of protein and a serving of healthy carbs.

The problem?

My typical debauched evenings and subsequent scrambling to get ready for work in the morning don’t allow a lot of prep time for my meals.

Enter the 90 second miracle.

Ingredients:

  • 1/2 cup egg beaters (or similar fat free egg subsitute, sold near the real eggs in your grocer’s refridgerator section)
  • 1 organic whole wheat bun (organic to avoid the dreaded High Fructose Corn Syrup)
  • A dash of low fat cheese, peppers, onions, etc

To prepare:

  • Put all ingredients in a normal porcelin cereal bowl. (This works better than plastic as it reduces sticking).
  • Microwave on high for 90 seconds or until the eggs look fluffy
  • Put eggs on bun, throw in a tupperware container or saran wrap, and you’re out the door.

    I’ve seen breakfast deli’s make their egg sandwiches this way. I know what I’m having for breakfast tomorrow…

    That’s a great idea Cashie! I am always struggling to get breakfast in, especially something with protein. This is perfect!

    Good info. I’m also trying to get back on my diet and need to vary up my breakfast/snack items :-)
